The blade is a staple of Japanese cuisine with its straight, symmetrical edges that are perfect for chopping and dicing vegetables, as it cuts straight without rocking like other more rounded shapes. Like all of our French-made knives, it is full tang, fully forged, and made from fifth-generation bladesmiths.
